Explicação técnica e conceitual:

O aperitivo é derivado de uma sopa de peixe cozida sob pressão. Após adicionar agentes gelificantes (ágar), a sopa é despejada em formas retangulares. Uma vez gelificada, ela é cortada em tiras grossas de tagliatelle e desidratada por cerca de 6 horas a 60 °C. No serviço, o tagliatelle é reidratado em água e temperado com uma emulsão crua de cabeças de camarão e óleo. A essa emulsão, adicionamos molho de soja, óleo de alho e extrato de anchova.

No prato, na base, há camarões vermelhos crus e lingueirão, raspas de limão cristalizadas, funcho e manjerona. Isso é coberto com um ninho de tagliatelle de sopa de peixe. O prato é finalizado com pó de alface-do-mar e pequenos pontos de gel de limão.

Conceitualmente, o aperitivo (Antipasta) nasceu da ideia de criar uma massa desprovida de carboidratos, inspirada no manifesto da cozinha futurista escrito por Filippo Tommaso Marinetti.

Technical and conceptual explanation:

The appetizer is derived from a fish soup cooked under pressure. After adding gelling agents (agar), the soup is poured into rectangular molds. Once gelled, it is cut into tagliatelle-thick strips and dehydrated for about 6 hours at 60°C. At service, the tagliatelle is rehydrated in water and dressed with a raw emulsion of shrimp heads and oil. To this emulsion, we add soy sauce, garlic oil, and anchovy extract.

On the plate, at the base, there are raw red prawns and razor clams, candied lemon zest, fennel, and marjoram. This is covered with a nest of the fish soup tagliatelle. The dish is finished with sea lettuce powder and small dots of lemon gel.

Conceptually, the appetizer (Antipasta) was born from the idea of creating a pasta devoid of carbohydrates, inspired by the manifesto of futurist cuisine written by Filippo Tommaso Marinetti.
