Carpaccio is usually something you associate with meat, so I thought… why not take the same idea and apply it to a tomato?
The goal wasn’t to make it taste like meat, but to give it a more meaty bite while keeping the tomato’s natural flavour. After a dehydration and a touch of cold smoke, the texture changes completely and the flavour becomes incredibly rich and concentrated.
It’s still unmistakably tomato, just with a texture you wouldn’t expect. Hope you guys give it a try! #tomatoes
