About this course
This cocktail masterclass uses one drink as the worked example. The martini is built classic first, then varied three ways: change the base spirit, infuse the components, add a flavoured oil. Gin takes shiso, vermouth takes hazelnut, and the two meet in a shiso hazelnut martini across nine lessons.
Flavour sits at the base of the method and presentation follows it, never the other way round. The infusions are taught before the drink that uses them, and the shiso oil before the garnish, so nothing in the finished glass is unaccounted for. Glassware and decoration are chosen to serve the flavour.
The last lessons go further than most bars will: a supercooled martini, an edible cloud, a bioluminescent cocktail, built with techniques that transfer to a kitchen. You leave able to put your own signature cocktail on a list and defend every component on it.

Giacomo Giannotti is an Italian bartender and the owner of Paradiso in Barcelona, which was placed 20th in the World's 50 Best Bars in 2019. He learned hospitality in his family's ice cream shop and trained for several years in London bars.
At Paradiso he runs a development lab rather than a back bar, which is where the infusion, oil and cloud techniques in this class were built. He teaches them here in the order he uses them, starting from a classic martini and ending with a drink that glows.
