About this course
How to prepare langoustine here means getting two dishes out of one animal. The claws go into a tartare under a langoustine bouillon and tomato water. The tail is finished with a sakura beurre blanc. Kaluga reads bold and clean, with large crunchy eggs. Beluga is finer, with enough structure to hold its shape in a richer dish, which is why it sits in walnut milk and walnut oil. Eric Vildgaard is a Danish chef and the co-owner of Restaurant Jordnær in Gentofte, outside Copenhagen, which he opened with his wife Tina in 2017 and which has since earned multiple stars for its precision and restraint.
He came to cooking out of a difficult early life and worked in several kitchens, Noma among them, before Jordnær. The restaurant sets refined Nordic cooking against a strong Japanese influence, which is the pairing logic he applies here to caviar, king crab and langoustine.
