About this class

  • Pasta dough pressed flat on baking paper
  • Dark pasta sheets in a wicker basket
  • A plated dish garnished with small violet flowers

This online pasta making class builds one plate in six lessons: basil-filled tortellini under a tomato salad sauce with freeze-dried mozzarella powder. Three doughs come first, including a vegan whole wheat dough.

The twist is in the sauce and the cheese: tomato treated as a salad rather than cooked down, mozzarella dried to a powder. You leave able to match a dough to its filling, roll and shape the same sheet every time, and treat a garnish as structure rather than decoration.

What the community says

  • Christian Eisl

What a great recipe, perfect for my vodka pasta.

  • Agustín Palomo

Is the semolina you use fine semola rimacinata or a coarser semolina?

    Heinz Beck

For this recipe we use fine semolina (semola rimacinata), which gives the dough a smooth texture. Coarser semolina is better suited for dusting or certain rustic pastas.
