At the end of this course you will be able to:
Choose a knife for each task and grip it so the cut stays under control.
Cut strips, cubes and the other standard shapes to one consistent size.
Sharpen and hone a chef knife so the edge survives a full service shift.
Separate cutting boards and match pots and pans to the heat they handle best.
About this class
This online knife skills class starts with the blade: which knife suits which task, how to hold it safely and how to keep it sharp through a service. Then strip cuts, cube cuts, brunoise and chiffonade.
The second half covers the equipment around the knife: colour-coded boards, sharpening and honing as routine, and the right pot or pan for each job. Eight lessons, 45 minutes, at Easy level. You finish able to cut to a named shape and keep an edge true.

Yvo AmarDo you sharpen serrated knives yourself, or do you leave that to specialists?
Jules CookingYou can, but it needs a different technique: a serrated sharpening rod thin enough to fit each groove, sharpening each tooth one by one at its original angle.
