At the end of this course you will be able to:

  • Start a dish from an ingredient or a concept, such as a memory, a supplier visit or an old cookbook, and sketch it before you cook.

  • Cost a dish against its perceived value and balance spend across a whole menu.

  • Set portion sizes for à la carte and tasting menus, and keep them consistent in service.

  • Choose a plate by size, shape, material and weight, and judge how it changes the dish.

About this class

  • Hand holding a clipboard with plating sketches and notes
  • Ornate brass press on a kitchen counter
  • Chef writing cost calculations on a whiteboard

This online food plating course follows a dish from the first idea to the plate. Jules starts before the stove: where an idea comes from, how to sketch it, and why a classic such as a duck jus is a starting point. Then comes the business side: what an ingredient costs against what the guest feels it is worth.

A sous-vide cod is plated on three different plates to show how much the plate alone changes a dish. The last lessons balance richness, acidity and crunch in a short rib with cherry gel, and plate courgette two ways: a stuffed flower with vadouvan foam, and rouleaux with onion cream.
