  • Finish baked croissants with a glossy syrup of sugar and water, with optional edible gold.

  • Cook a vanilla pastry cream and set it into cores for the pineapple pastry.

About this class

  • Baker lifting sourdough starter with a spoon from a glass jar
  • Hand lifting sticky poolish from a bowl of fermented batter
  • Baker holding a golden sourdough baguette in both hands

This online croissant course treats viennoiserie as the end of a fermentation path. Lessons #1 and #2 build a sourdough starter and a poolish, then four breads, from a baguette to a couronne bordelaise, train the habits the croissants need: timing, dough temperature and pH.

The viennoiserie lessons work from one dough with a little stiff sourdough in it. The classic croissant is laminated with butter, the bicolour version adds a cocoa layer, and the pineapple pastry sets whole slices of pineapple on a pastry cream core.

“Those 12 hours of fermentation of the dough are probably the most important.”
